Geotrichum candidum is a filamentous yeast-like fungus. G. candidum strains exhibit wide phenotypic variability, from the yeast-like form to the mould-like one. It is an ubiquitous organism found in various sources, such as air, soil, water, silage, digestive tract and interior organs of different mammalians. It is a component of the natural flora of milk and is used as a maturing agent for both soft and hard cheeses. G. candidum has long been the subject of biochemical and physiological studies due to its biotechnological significance and common occurrence.
