General Comment
2011-01-26 Occurs in nature as a mixture of at least eleven isomers, all having bicyclic structures with no free carbonyl; a precursor in the formation of advanced glycation products (AGEs) such as imidazoline and pyrraline. A reactive intermediate in the Maillard reaction, a non-enzymatic reaction of ketones and aldehydes with protein amino groups which is believed to contribute to diabetic complications.
