This study was carried out to investigate the microbial community involved in the different stages of the anaerobic fermentation of food waste using a leach bed reactor system. The ultimate goal was to rapidly hydrolyse the food waste components and ferment the hydrolysate into valuable organic acids. 16S rRNA profiling of bacteria community and metaproteomics was used to investigate the microorganisms involved in the different food waste breakdowns in the system.
